Palomas Mensajeras Mexicano is a distinctive spirit crafted with care in the picturesque lake-side community of Oponguio, Michoacn. This exceptional spirit is the product of maestro vinatero Don Miguel Perez Resendiz and his sons Miguel Jr. and Melltn, representing four generations of mezcal-making expertise.

The Agave

What sets this spirit apart is its use of Agave rhodacantha, commonly known as maguey Mexicano. Interestingly, this agave is not native to Michoacn. Don Miguel collected the seeds during a trip to Oaxaca decades ago and planted them on his own land. Through careful cultivation, the family now maintains a sustainable supply of Agave rhodacantha in Michoacn.

Production Process

• Cooking: The agaves are cooked in a traditional underground pit oven.
• Milling: The cooked agaves are milled using a unique mechanical shredder, ingeniously crafted from a converted 1978 Dotson car engine.
• Fermentation: Open-air wild yeast fermentation occurs in earthen pits lined with oak planks.
• Distillation: The fermented agave is distilled in a Tarascan (also known as Filipino) still.

Aging

The first batch imported to the US was distilled in April 2019 and aged in glass for 4 years and 2 months, allowing the flavors to mature and harmonize.
