The Pet Nat is dry with supple, edginess and gorgeous nuance. Soft white stone fruit with pronounced minerality amid notes of golden apple and a fun fizz. Ptillant-Naturel (natural sparkling) is a catch-all term for practically any sparkling wine made in the mthode ancestrale, meaning the wine is bottled before primary fermentation is finished, without the addition of secondary yeasts or sugars. Then continuing inside the bottle; trapping CO2 in the process, which is given off by the yeast. The resulting wine therefore has bubbles in it. Refreshing.
