Traditional Production Process

• Roasting: Co-roasted in an underground oven with guamuche firewood
• Resting: 8 days post-cooking
• Preparation:
  • Hand-cut with machetes
  • Processed through a small mechanical shredded
• Fermentation: Initial dry fermentation in pine tanks (2 days)
  • Extended fermentation with well-water (1 week)
• Distillation:
  • Double-distilled in four clay-pot stills
  • Location: “La Esperanza” palenque

Production Details

• Batch Size: 92 liters total
• Proofing: Carefully balanced with heads, heart, and tails by Lalo
• Distillation Date: August 2023
• Aging: Rested in glass demijohns for 6 weeks before bottling
